Recipe: White Texas Cake

Jeanne Cluts has worked in the Don Ayres office for more than 10 years, and she also happens to be a pretty phenomenal cook! Every so often, Jeanne passes along one of her amazing recipes. Here, she shares a great recipe for White Texas Cake. Give it a try, and let us know what you think!

Cake Ingredients
2 sticks margarine
1 c. water
2 c. sugar
2 c. + 2 T. flour
1 tsp. salt
3 eggs
1/2 c. buttermilk
1 1/2 tsp. baking soda
1 tsp. vanilla

Icing Ingredients
1 stick margarine
5 T. milk
1 box powdered sugar
1 tsp. vanilla

To prepare:
Preheat oven to 350 degrees.

In a medium saucepan, bring water and margarine to a boil. Add sugar, flour and salt. In a separate bowl, beat eggs. Add buttermilk, baking soda, and vanilla. Combine everything and pour into cake pan. Bake for 25 to 30 min.

While cake is baking, combine icing ingredients. Ice cake while still warm.
