Recipe: White Chicken Chili

Jeanne Cluts has worked in the Don Ayres office for more than 10 years, and she also happens to be a pretty phenomenal cook! Every so often, Jeanne passes along one of her amazing recipes. Here, she shares a great recipe for White Chicken Chili – a perfect meal for a fall evening!

Ingredients:
1 13-oz can chicken breast, drained
1 large jar white beans
½ jar salsa (15-oz jar)
2 12-oz cans chicken broth
2 cups Colby Jack cheese
1 T. cumin
2 cups crushed tortilla chips

To prepare:
Place the chicken, beans, salsa, chicken broth, cumin and cheese in a large pot. Heat on medium until mixture is hot and cheese is melted. Spoon into bowls and add a few crushed tortilla chips. Enjoy!
