Recipe: Hoosier Crumb Cake

Jeanne Cluts has worked in the Don Ayres office for more than 10 years, and she also happens to be a pretty phenomenal cook! Every so often, Jeanne passes along one of her amazing recipes. Here, she shares a great recipe for Hoosier Crumb Cake … mmmmm!
Ingredients:
1/2 c. butter or margarine, softened
2 c. packed brown sugar
2 c. all purpose flour
1 egg, beaten
1 c. buttermilk or sour milk
1 tsp. vanilla extract
1 tsp. baking soda
1/2 tsp. salt
whipped cream and fresh mint, optional
To prepare:
In a mixing bowl, cream the butter and brown sugar. Add flour, and mix until blended. Set aside 1/2 cup of mixture for topping. To the remaining mixture, add egg, buttermilk, vanilla, baking soda and salt. Stir until just blended. Pour into a greased 9 x 13 pan. Sprinkle the reserved flour mixture on top. Bake at 375 degrees for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Garnish with whipped cream and mint if desired.
