Recipe: Enchilada Bites

Jeanne Cluts has worked in the Don Ayres office for more than 10 years, and she also happens to be a pretty phenomenal cook! Every so often, Jeanne passes along one of her amazing recipes. Here, she shares a great recipe for Enchilada Bites. Give ‘em a try and let us know what you think!
Ingredients:
1 1/2 pounds of hamburger
2 cups cornbread, crumbled
1 package taco seasoning
1/2 c. enchilada sauce
Mix ingredients and form mixture into 1-inch balls. Bake at 350 degrees for 18-20 minutes.
Sauce:
1 16-ounce can enchilada sauce
1 8-ounce can tomato sauce
Place meatballs in crockpot. Cover with sauce. Top with 1 c. shredded cheese if desired. Cook until heated through.
